But idk if I have the willpower to commit to posting on the forums twice a day every day. How often do the noob games occur?

There is no requirement to be active during the night cycle other than making sure to submit an action if you have one. Typically it's best to read the thread and make at least 5 posts during the day cycle.

Noob games run once a year, but we always welcome new players during any game throughout the rest of the year as well

To add to this, you might be surprised by how easy it is to make that many posts during the day, you can get really into it

Sure, sounds fun! I've never played Mafia, but I used to play Town of Salem a LOT, so I'm definitely interested.
