I have bachelor's in psychology: 2.8 cGPA, MPH in epidemiology: 3.9 GPA, retook all prerequisite courses for podiatry with 4.0 GPA. 30+ hours shadowing DPMs, 50+ hours shadowing different specialties, volunteering throughout years, and worked as a research analyst for 3 years. Will be taking MCAT in May as well. What are my chances of getting in?

GPAs are fine. Study hard for the MCAT and aim for 500+. Good luck!

Try not to use any racial epithets during your interview and I think you'll squeak by.
