Hello, I work at Athletico as a Rehab Aide and get to basically watch my occupational therapist from afar and close constantly. Am I able to list this job as observation hours as well?

Contact the schools you are applying to and see if they will accept that. I don't see why they wouldn't, especially since you work there. Maybe just try and getting observation hours in a different OT setting you aren't familiar with?
