What are the recommended classes that I should take to demonstrate competence in upper-division biology classes? Also, is there a number of recommended upper-div biology lab courses I should take, too?

Genetics, anatomy, microbiology, but it’s really up to you, those are just some of the upper levels I took for my bio degree that almost every bio major at my school takes

Cell biology was probably the highest yield class for the B/B section of the MCAT. Would def recommend.

I would say cell biology, neurobiology, or anatomy/physiology.
