Something I definetely am knowledgeable about, finally!
Taking Bio and Chem at the same time isn't diffucult, but can be time consuming as you can imagine. I would recommend against taking english and spanish together with Bio and Chem, as this would be 4 classes that can be extremely time consuming. If you're already pretty proficient in Spanish, you might be good, but for me taking those 4 would leave me pretty overloaded.
Usually what I do is take 3 time consuming classes, and either 1 or 2 easier classes that I'd either enjoy, or fullfilled some requirement and were easy. Of course there will be times when you have to take 4 time consuming classes, but I try to keep it to a minimum. I'm sure you know this from your past engineering experiences.
At my college, psychology is pretty easy, just do some reading and go to class, guarenteed A, so I'd use that as a buffer where ever you need an easy class.
I'm not sure about how you feel about stastics, but having an engineering background, I'm sure you'd be fine.
I say psych and stats, and pick either english or spanish.
