Currently 2nd-year student looking to apply early. Looking to go to as good of an institution as possible b/c really interested in research. A little uncertain if MCAT will hold me back. Feel that school list is long and top-heavy, would appreciate advice on how to make it more balanced.

University of Washington takes almost no OOS students from outside the WWAMI region.

Try to get more community service such as at a homeless shelter, food bank, soup kitchen etc. I would recommend only applying to about 10 schools outside TX that you would seriously consider over the in-state tuition rate. I suggest:

Emory
Harvard
Stanford
UCLA
Yale
Columbia
NYU
Wash U
Mayo
Cleveland Clinic
Johns Hopkins

Your nonclinical volunteering is very clinic-adjacent. You definitely need traditional community service that was suggested above. You must get out of your comfort zone and see people in need where they are.
