It would be more difficult than the already very difficult process of finding a Pathology job. Basically, you are kind of taking a two year sabbatical from Pathology ( they don't care what you did in some third world country). The employers might consider work experience from countries like Canada, UK, Europe, or Australia though.
That being said, it is not impossible. Hundreds of people have done it before. The key is to make good contacts during your residency here and maintain those relationships by regular e-mail communications and by attending USCAP and other meetings. Residency/fellowship from a top tier institution might help.
Your best bet would be your own residency/fellowship program (provided the administration/PD/director does not change in two years).
