If there is already a waitlist for those not actually interviewing, how exactly do you intend to switch days with someone from another day? Do you just call the administrator at said school and say ""booswim542 an I would like to switch". Is that kosher?

Yea, this worked for me. I was able to switch one of my dates with another person on this forum yesterday. Obviously, you have to switch it with someone who has been scheduled for the interview on the date you want and vice versa. I just emailed the program coordinator and it worked out perfectly.
