Okay, I'm kind of confused. I've been out of undergrad for 3 years, out of grad for 2...so who is supposed to write my Letter of Evaluation (AMCAS, I mean...not letters of recommendation from professors and so forth)?

I guess I'm not clear on your question.

AMCAS LOE = normal LOR. It's just that only some schools are participating in the AMCAS system this year (it's a pilot). So for those schools, you would have your writer forward (or have Interfolio forward) those letters to AMCAS. Then AMCAS shares the letters of recommendation with those specific schools for you. That's the only way those schools will accept your letters of recommendation this year.
