Anyone know if these jobs are stable? With less students applying each year and some schools with reduced class size, would schools end up reducing their faculty starting with assistant clinical professor positions first?

You're not going to be a bling materialist on University grounds, it's just not fashionable. Also, the pay is about 80% of the market rate. Yes, even full Clinical Professors have been laid off for budget savings and replaced with Assistant or Without Compensation faculty. They are not stable for people like you, because you don't want it enough.
