Start / join an anesthesia interest group. Find an anesthesiologist that is known to be a good mentor by peers and start a continuous relationship with them, meeting regularly or even shadowing outside the rotation if you are able. It's hard to get an LOR from an established relationship with an anesthesiologist because you only work maybe 2 days the whole rotation with the same one.

Put powerful influential people in your corner, and invest in a relationship with them.

It probably would be best to find someone who has proven they have an interest in med students (i.e. they teach a lecture, they are part of standardized patient interview practice, etc.) Because they will be easily approachable and sympathetic to your cause. If you do go for the "rando in the catalog" approach, ask them "who in the department loves teaching med students and can you put me in touch with them?" They should be happy to help you out.

You gotta put yourself out there, you are your best advocate after all!
