How to improve my application

I'm looking for some advice on how to strengthen my application for this summer.

GPA: 3.596
MCAT: 508
Volunteering: 3400+ hrs (2 yrs AmeriCorps, Hospital, and Clinic volunteering)
Shadowing: currently shadowing weekly, and will continue until I apply (# to shoot for?)
Lab work: 840+ (undergraduate spinal cord injury research)

I'm a semi-nontraditional applicant, having graduated a few years ago. I spent 2 years volunteering with AmeriCorps, both years with a health focus and direct patient interaction in the first year. I currently work at healthcare nonprofit.

Since I have been out of school for a few years, I was thinking about taking a collage class while I’m working to demonstrate I can still handle coursework. Would this help? What class should I take? Other suggestions to strengthen my application?

Any advice would be appreciated!
