Format of Extracurricular Section on AADSAS

What is a proper way to fill in extracurricular sections of the application, like how many line is appropriate in order to explain...also what should not be included and the such...thanks!

Also, is it ok to put hobbies that require manual dexterity as one of the criteria?

There's a great thread on this started by Jrogoff (he will probably post a link to it, which I would do if I knew how). But to answer your questions: You can use any format you prefer in the EC section. Some use a bulleted/numbered system while others use complete sentences. And yes, list any hobbies that require manual dexterity.
