Would you recommend filling out the non required parts for personal information section. Also, would you recommend filling out the parent gaurdian section and would it even be favorable to indicate that you have parents that work in the medical field. I don't want to disclose any unnecessary demographic information if it makes me look like a less appealing applicant.

I'd say fill everything out and being honest about everything. I don't think that disclosing vs not disclosing demographic information is going to be the difference in whether or not you're accepted. There are many other more important things in your application that make you a strong applicant.
