How much does courseload per semester in undergrad affect your chances of getting into vet school?
Like, if I have a high GPA and varied experience, will it make any difference in my chances whether I'm taking 15 or 18 credits a semester? If I took a 14 credit hour semester, do I need an 18 to make up for it?

No, that level of variation doesn't matter.

If you were consistently taking less than a full-time's worth of coursework and it wasn't due to other responsibilities like having a job that forced you to do so, that might raise some flags and concerns about whether you'd be able to handle the load of vet school, but having variation within full-time doesn't matter as long as you're doing well in your classes.
