Check whether some of the medical schools in your wishlist will take AP biology credit. Most schools will still require you to take a traditional introductory biology sequence, even an accelerated one. Otherwise traditional upper level biology courses with labs would suffice. You need the content for the MCAT so a shortcut here makes no sense.
 
Most medical schools will not accept AP coursework in my experience.

AP courses are really nothing like intro/foundation level college bio courses, primarily due to the differences in lab expectations. Unless things have dramatically changed since I was in HS, many of the AP bio labs would not even be considered by lab directors at most colleges/universities

Even if some reqs were relaxed due to covid, you want to try your best to meet all prerequisites at as many schools as possible to give yourself the most options when applying
