Just wondering if thank you notes are sent to each individual you meet with on interview day? Including residents?

Yes. If you have gotten their business card, then you should send them a note. Besides thank yous, the card is a good place to include something along the lines of how you loved the place and would like to come back there (if you did) or how you thank them for their time, and think the place is wonderful, but just not for you (if you did not like it and do not intend to rank it, or rank it in your top five).
