Will be applying next summer (2019). Advice on weaknesses I can fix during this time and WHERE SHOULD I APPLY?

GPA: 3.89

research: ~2000 hrs
volunteering: ~270 hrs ranges from hospice - intensive care unit - poverty alleviation
shadowing: 50 hrs
ec: teaching and vice president of student organization
job: special ed assistant teacher
life challenge: single, teen mom

Can you break down the hours for the various types of volunteering?
Does the shadowing include a primary care doc?

You are really top-heavy with the research and your stats aren't in line with what selective research-oriented schools would be looking for. I agree with @Goro that more research will do little to help you.
