Advice please! Is it too late to apply?

I'm trying to decide on if I should apply 2021 cycle or wait until 2022 cycle to apply. I won't be ready to submit until late January, and I'm nervous that applying late will make me a worse candidate. I'm confident in my stats but I'm scared I may be lacking in my extracurriculars after going through more forums.

OAT AA/TS - 350/350
GPA/sGPA - 3.76/3.82
40 hrs shadowing optometrist
intern at ophthalmology clinic/research institute
not part of any clubs and minimal volunteering (like 2 health fairs?)
worked as a pharmacy tech assistant and dental receptionist

If you want to start this fall, apply now and see what happens. Don't reject yourself without even trying. Worse thing is your top choices reject you, and you apply again in July when there are more seats available.

I'd say apply to a few schools this upcoming cycle just in case. Your stats are impressive and interviewees will likely reject some offers in exchange for their top school.
