The AAMC is not the one looking at your application, they also want schools to forget about the MCAT once someone has over a 500. Shadowing is useful, but most adcoms do not consider it clinical experience. I have talked to N>6 individuals associated with adcoms in real life and no one accepts shadowing in lieu of real clinical experience. This is on top of the adcom members on this site saying the same thing. Shadowing is good and necessary, but it is not clinical experience. It is just observation.
