is University of College Cork for medical school pretty highly regarded? How decent are the chances of someone who is a US citizen going to this school an d wanting to do residency and practising in the states???

any info about the school is welcome...

There is a thread about UCC already. Some of your questions may have been answered already. Do a search for University College Cork.
 
All the Irish universities are well regarded. People seem happy at UCC. It's generally accepted that it's not a problem for Irish grads to place into a US residency (assuming good USMLE scores). While places for Irish universities seems to be getting more competitive, it's likely that each Irish univ. takes maybe about 15-20 US/Canadian students.
